I recently made these cookies. They are an excellent combination of many things I like; I think that the spice/chocolate chip combo is actually better than oatmeal chocolate chip cookies OR oatmeal raisin cookies. The higher brown sugar (and butter) content also makes them pretty ideal. They are quite difficult to stop eating once you start.
Ingredients:
- 1 and 1/4 c salted butter
- 3/4 c brown sugar
- 1/2 c white suar
- 1 egg
- 1 t vanilla
- 1 and 1/2 c flour
- 1 t soda
- 1 t salt
- 1 t cinnamon
- 1/8 t nutmeg
- 3 c oats
- 2 c chocolate chips
Directions:
- Preheat oven to 375 (with our oven that runs high, I heat to 360)
- Cream 1 and 1/4 c butter with 3/4 c brown sugar and 1/2 c white sugar.
- Add 1 egg (beat lightly in the big bowl) and 1 t vanilla
- Add 1 and 1/2 c flour with 1 t soda, 1 t salt, 1 t cinnamon, 1/8 t nutmeg on top. Mix well
- Add 3 c oats (may want to add gradually depending on how big your bowl is)
- Add 2 c chocolate chips
- Place rounded balls in rows on greased cookie sheet
- Bake for 9 minutes. The cookies may look a little underdone when you remove them from the oven but will harden a little as they cool.
